COCONUT PANDAN PROTEIN BREAD | VEGAN, HEALTHY , SUGAR, DAIRY AND GLUTEN FREE


 

I'm back again with new recipe blogpost, hooray!
I have been trying, testing and coming out with some new healthy recipes for the past few months, and today I got one for you guys. This always serves me well, high in protein, low-carb and also satisfied my sweet tooth, perfect as quick breakfast on the go or as a snack.



COCONUT PANDAN PROTEIN BREAD.
Ingredients:
- 1 cup oat fiber.
- 3/4 cup coconut flour.
- 1/2 cup of hemp protein.
- 1 1/2 tsp baking powder.
- 1/2 tsp baking soda
- 1/4 tsp salt.
- 3 medjool dates, pitted and soaked in warm water.
- 1/2 cup aquafaba, beaten into thick foam (aquafaba is the water from cooking/ soaking chickpeas) .
- 1 cup of cherries.
- 1 tbsp of pandan extract.

Direction:
1. Preheat oven to 180 degree C.
2. In a large bowl, lightly beaten aquafaba into white stiff peak foam with hand mixer.
3. In a separate bowl, mix together all the dry ingredients together.
4. In another bowl, mash pitted dates until it become a paste and add to the dry mixture.
5. Slowly mix together the aquafaba foam and fold together until it all mixture well combined.
6. You can add in some of the dates water if the mixture is too dry.
7. Slowly fold in the dries cherries. Set aside some to put on top.
8. Pour the batter into baking dish (I am using silicon baking dish, it's amazing!).
I have some extra batter which I pour it into the muffin silicon cups.
9. Put some cut up cherries on top for extra fancy!
10. Bake for about 30-40 mins until the tops is golden brown or test it by insert a fork in the middle and it comes out clean.
11. Let it cool for 10 mins and you are ready to serve.
12. For extra Beautiful-ness , sprinkle some shredded coconut on top.



This bread is totally vegan, gluten free, sugar free and healthy! High in protein and completely low-carb. I have this as my snack everyday and totally satisfied my sweet craving.
