PROTEIN MUFFIN & COOKIE BITES | HEALTHY & EASY


New week new meal prep, I mean dessert baking prep (is that even a word?).
But this week I got 2 recipe of you guys! Yeah, kinda 2 in 1 recipe type. It's all about those prepping.
I didn't really have much stuff on my cupboard, so I just winged it but it turned out so good, I'm impressed myself.

HEALTHY BANANA PROTEIN PANCAKE | VEGAN & GLUTEN FREE


When people said eating healthy meaning you eat salad everyday, I would say "bullshit"! For me, healthy eating where you find food that are wholesome without nasty ingredients and make it into interesting meals. Finding healthy alternative to the food you love is such an easy and fun way to switch up the bad eating habit.

I love food, like seriously no joke I love food anytime of the day (probably my bestie). So naturally I love try and testing new healthy recipes. It's my way of destress.

Healthy Banana Protein Pancake
Ingredients:
- 1 cup of gluten free oat flour.
- 2 ripe bananas, mashed.
- 1 tbsp of baking powder.
- 1 tbsp of baking powder.
- 1/2 cup of non dairy milk.
- 1/4 cup of flax egg (flax seed mix with water).

Direction:
1. Combine all the dry ingredients in a bowl.
2. Add the dairy free milk, flax egg and mashed banana into the mixture and mix until smooth.
3. Heat up a your pan and spoon the batter mixture into the pan.
4. Flip carefully when bubble in the middle of the pancake are looking stiffened.
5. Repeat until batter is gone. (And try not to eat them while you're cooking, just saying :D )
6. Layer up with more fruits, maple syrup and sneaky dairy free chocolate, totally optional but highly recommended!

Remember guys, any meal can be made healthy, it's all about making wise decision and creating new habits so it'll become a lifestyle that you can stay on track.

RECIPE : ON THE GO PROTEIN BLISS BALL | RAW AND VEGAN


I hate the feeling of starving when I am on the go, because when I do I have a tendency to grab something I will regret after 2 mins of finished eating the meal. Does anybody with me? 
In order to fight those feeling, I have found myself making loads of snack every week- usually weekend to make some healthy snack. One thing I had to have on my snack is protein. Protein keeps me fuller for long and keep me satisfied. For most of the times my snack always tend to be sweet stuff, cause I have a huge sweet tooth.

RAW VEGAN PROTEIN BLISS BALL
Ingredients:
- 10 to 12 pitted dates, soaked.
- 1 cup almonds.

Direction:
1. Blend the pitted dates into paste in the food processor.
2. Chuck the almond in then continue blending.
3. You might need to pause for few times to scrape the side and continue blending.
4. Shape into small ball - because I need to learn portion control. 
5. Additional touch, roll them in some shredded coconut or cacao powder.
6. Put them into on the go container and put them into your bag.

Remember not to eat them just because you are bored, which I am always sinful for.

POST WORKOUT PROTEIN SMOOTHIE BOWL


New year but yet same new year resolution as always which to get fit and maintain healthy lifestyle. I have been feeling myself way too many times for the past couple year. But seriously this year I wanna make a change. I have started signing myself up back again to 2 year gym membership (say no to excuses). I used to enjoy outdoor exercise, but I found myself making more excuses either is bad weather or just laziness. Now I am really into working out, even make a workout plan and so far still going strong. I might share it in future post.

It has been crazy crazy busy months of my life which I have been out everyday and hardly staying home and calm. But today I dedicate some time to give myself some me time and do whatever I love which obviously ended up baking. I love food as you guys probably can guess, but I also enjoy cooking and baking or creating any time of food. You know when that time of the month when you just wanna lay in bed avoiding cramp and eating chocolate all day? Yeah, that is me!
When I am hormonal, I am tend to grab toward chocolate, It's just my comfort food. But somehow I don't want it to be a reason for me to gain 10 ponds a day. So last week I made this super easy 2 mins chocolate mug cake easy way, literally so easy, I believe a 5 years old kid can do it, or maybe not?

Ever since I got back from Thailand last year, I have been craving for their mango sticky rice dessert One of my favorite food/ dessert of all time. Sometimes I can have huge portion of it and eat it as a main meal. That's how you know you love something. Of course I can't just fly to Thailand and have those everyday (although I really want to), but I decided to learn and make my own self recipe.

VEGAN EATS #9 : CHOCOLATE PEANUT BUTTER MUFFIN (VIDEO)



Hi guys!
Recently I have been obsessed with The Great British Bake Off, serious addiction! But every time I watch it, I will ended up with a massive craving sweet tooth. Then I will get very inspired to bake something. and of course vegan version! :)

CHOCOLATE PEANUT BUTTER MUFFIN (10 muffins)
Ingredients:
- 2 ripe banana
- 2 tsp flax seeds
- 2 tsp chia seeds
- 1 cup wholemeal flour
- 1/4 cup cacao powder (or cocoa/ carob powder)
- 1/4 cup light packed brown sugar
- 1 tbsp baking powder
- 1 tbsp peanut butter
- 1/4 cup nut milk (or any other plant base milk)

Direction:
1. Preheat oven to 180 degree.
2. Soak flax seed and chia seed in some water, and ket it thicken up for 5 mins.
3. Meanwhile, mix in the dry ingredient. Shift them to remove any lumps and achieve softer texture muffin.
4. In a separate bowl, mash 2 ripen banana. Add in the flax and chia eggs, then stir to combine. Then add heaping spoon of peanut butter then mix them really well.
5. Combine the dry ingredients and wet ingredients together and mix.
6. Slowly add in the nut milk, and mix well again.
7. Scoop in muffin tin or muffin case.
8. Bake for 25 mins.
9. After finished baking, let it cool before removing from the tin/case.
10. Voila, ready to serve!

I kid you not, these muffin is gone within two days. They are super soft and moist. I ate these as my morning breakfast and also snacking throughout the day while watching TGBBO. Oh, Sunday well spent!

WHAT I EAT IN A DAY (VIDEO)

Hi guys, I've been feeling kind pukish and unproductive for the whole day today. It's probably due to the fact of I fell and roll down the stair yesterday and ended up with scratches and bruises all over my body. Honestly I didn't feel anything hurt physically but waking up today my body are in ache and not to mention mentally feeling sluggish. I meant to do a little bit of filming but seriously just not in a  mood for any camera to be pointed on my face.

Anyhow, enough of rambling, today's just another video post for what I eat in a day, my favorite video to film and edit cause it's all about food and I can find a new music and edit it in kinda creative way. Hope you guys enjoy! :)

VEGAN EATS #8 : BERRY NICE CREAM SWIRL


Hi guys, last Sunday I was feeling kinda bored and thinking of making some nice cream and had thought of filming it. Then of course after I devoured it, I kinda forgot about it until suddenly I found the footage in my laptop. Haha! But, I thought I could make a short clip of me making this nice cream. Of course very healthy and amazing!

BERRY NICE CREAM SWIRL
Ingredients:
4 large frozen banana
1 tsp maqui powder

Topping: basically whatever ( I used coconut flakes and black strap molasses)

Direction:
Basically throw frozen banana, blend then add maqui powder and blend again. 
It's that simple.

VEGAN EATS # 7: APPLE & GINGER CRUMBLE



Apple is so in season right now, although in my area, it's always in season! But I have been scrolling through pinterest and apple always popped up and grabbed my attention, not to mention apple is one of my favourite fruit. An apple a day keeps the doctor away!

Today I wanna share with you my lazy super quick apple crumble recipe. No sweat and literally takes few minutes, well maybe another 25 mins waiting. But totally no mess, no oil, healthy and guilt free.

APPLE AND GINGER CRUMBLE (QUICK AND EASY)

Ingredients:
Base
1 medium apple, cubed
1/2 lemon, juiced
1 1/2 tbsp ginger infused coconut sugar (you can also use grated ginger with sugar )

Topping:
2 tbsp tahini
1/2 cup oats
2 tbsp coconut sugar

Direction:
1. Mix all the base ingredient and place it in a mini ramekin.
2. Mix all the topping to create crumble topping and place on top of the apple.
3. Bake at 180 degree for 25 mins.
4. Voila!

Seriously guys, it's super easy! Apple and ginger is just nice combination. You can also add cinnamon which I forgot. But adding cinnamon will be perfect!

VEGAN EATS #6: 3 INGREDIENTS MUFFIN



Today is Mid-Autumn Festival which for Chinese tradition you can enjoy moon cake and playing lantern while enjoying the moon and the star at night. I remembered back the day when I was still in college, me and bunch of my friends used to buy huge box of moon cake and lanterns. We will went to park and writing down our dream wishes on the lantern and fire it up then we watched it flown up while enjoyed our moon cake. It was such fun memories, I do miss the time we spend together. Now we all grown up, we never really do that anymore cause all of us are staying far from each other. Maybe one day, when we meet again, we sure do that again, and maybe even I can make some vegan moon cake! I should learn to make from now first.

Okay, although today's vegan eats is not about moon cake. I want to share my super simple easy 3 ingredients muffin.

Three Ingredients Muffin
3 bananas, mashed
1 cup flour, I'm using buckwheat flour
1 cup water

Direction:
1. Pre heat oven at 180°C
2. Combine all ingrident, and mix well.
3. Pour into muffin cup.
4. Bake for 20-25 mins.
5. After done, let them cool and topped with anything you like, I used almond flakes and shredded coconut.
6. Enjoy! Leftover can stay fresh fin the fridge for 2-3 days.

It's s simple and easy! It probably only takes you about 30 mins top. I made a big batch of this the other day to bring to my friend's party, and people are loving them. They didn't even know that it's vegan until I told them . Vegan is boring and only eat salad? Hmm, I said a big no no.  It's also a great way to use up your over ripe banana. It's your natural sweetener, egg replacer, yeast, basically everything perfect for baking. Give it a try!
